      <title>dinner for one</title>

&lt;br/&gt;Last night marked a full week– hm, maybe longer?– of me cooking at home. Kind of a deal, since I’ve been going out/ordering in for the better part of the past two years. Verily lost whatever menial cooking skills I might have been able to claim, you know, back then.
&lt;br/&gt;
&lt;br/&gt;Anyhoo. Last night’s fare: Cut okra, lightly sauteed in butter and garlic, atop a bowl of brown rice with a splash of soy sauce and lemon. I loved it. Devoured it.
&lt;br/&gt;
&lt;br/&gt;And I realized. When I have no one else to feed, dining alone, my tastes are actually quite simple. Provincial, even. My dinner for one: Esoterically tasty, modest, easy– but just as filling.
&lt;br/&gt;
&lt;br/&gt;Hm.
&lt;br/&gt;
&lt;br/&gt;Now I challenge you to try to fit that into my sex/food theory. ;)&lt;/div&gt;

      <title>savor your bird....or save the bird this year</title>

      <description>&lt;div&gt;So what is everyone doing with the turkey?
&lt;br/&gt;
&lt;br/&gt;I have brined mine for the past few years and everyone loves it.  A classic brine is:
&lt;br/&gt;1 1/2 cups, Kosher salt**
&lt;br/&gt;**See notes below regarding amount of salt and types of salt
&lt;br/&gt;1 1/4 cups, brown sugar
&lt;br/&gt;10 whole cloves
&lt;br/&gt;3 teaspoons, black peppercorns
&lt;br/&gt;1 1/2 gallons (6 quarts) apple juice or cider (non-alcoholic)
&lt;br/&gt;the peel from one orange or one tangerine (colored part only - not white pith)
&lt;br/&gt;optional: 3 teaspoons, dried thyme and/or 3 teaspoons, dried sage
&lt;br/&gt;
&lt;br/&gt;Bring to a boil then simmer for about 15 minutes.  Completely cool it and immerse the turkey.  8 to 10 hrs should do it.  If that seems entirely too salty you can lower the amount but the flavor will suffer for it.  I juts know how people feel about salt intake and such. 
&lt;br/&gt;
&lt;br/&gt;As far as sides....I usually combine potatoes and sweet potatoes for one helluva mash.  Green beans are always a staple but I really hate that whole french fried onion thing. blech.  Also, cornbread stuffing with apple and roasted pine-nuts.....damn...that sounds so good.
&lt;br/&gt;Is anyone going all out and if so, what are you making? I have alot of friends that don't even serve turkey so it's always interesting hearing cool ass substitutions.

      <title>Jambalaya, me oh my.</title>

      <description>&lt;div&gt;Shopping the produce section at Safeway, and I got the song in my head.  If you know the tune, you know how catchy it is.
&lt;br/&gt;
&lt;br/&gt;I thought to myself, maybe if I give in to this earwig, it'll go away.  I used jumbo tiger shrimp, spicy beef links and smoked turkey instead of ham.  Also, California Basmati rice.
&lt;br/&gt;
&lt;br/&gt;It was really good.
&lt;br/&gt;
&lt;br/&gt;While it simmered, Liz went through the iTunes store and played several amusing covers of the original Hank Williams song, but I think I prefer the original.&lt;/div&gt;

&lt;br/&gt;so of course i went to the website: http://www.fatduck.co.uk/intro.html.  there are some interesting dishes on his menu.  the melding of some of these tastes does not sound possible let alone digestible but who am i to knock creative invention.  this restaurant is the best for a reason and i wish i could go there to find out firsthand.

      <description>&lt;div&gt;The most recent movie I've seen is about the best food-related holiday, Thanksgiving, and is called "What's Cooking".  It came out in 2000 and won a Sundance Award for it's clever melding of family disfunction, cultural differences and menu variations.  The food shots were amazing.  Not a big Turkey fan but after seeing this movie it makes you want to love turkey.
&lt;br/&gt;Other than that one I would recommend "Mostly Martha".  A German movie with subtitles.  Love this movie!!&lt;/div&gt;

      <title>is the food the thing?</title>

      <description>&lt;div&gt;Sorry, haven't been online much lately.  Another tragedy has struck and I'm having to deal with everything that comes with loss, despair, comfort and moving on.........fucking again.
&lt;br/&gt;
&lt;br/&gt;I know this might seem a bit morbid but I was just wondering......
&lt;br/&gt;
&lt;br/&gt;What would you serve at your wedding?  And more importantly....would you request certain foods to be served at your funeral?
&lt;br/&gt;I have been to 2 funerals in the past 2 months and both were very different but I can't help but wonder what our dearly departed would have really wanted to be served in memoriam of him/her?  My dear wonderful David had sandwiches, coffee and ice tea served at his and spanish rice, refried beans, chicken fajitas and salad were available at my friend Ron's memorial.  I suppose that a wedding would be more interactive as to what exactly would be prepared.  I had the tried and true Lasagna, garlic bread and salad at my wedding and it was kick ass.  I have to be honest though, my funeral would fucking baffle me as to what to request and I don't know if it's my subconscious aversion to the idea of my infinite doom or dumbfoundedness that leaves me in this cerebral blank.

&lt;br/&gt;I'm thinking that everyone has their vision of what they would like for both.  I just want to know what y'all think.

      <title>Not a question for the squeamish</title>

      <description>&lt;div&gt;Where can I buy non-hydrogenated lard?  Lard is hard enough to find these days but when I do it's Armour Lard which has hydrogenated lard on the list of ingredients. Considering that I'm using lard in order to *avoid* the hydrogenation in shortening, this isn't good.&lt;/div&gt;

      <title>Holiday Baking</title>

      <description>&lt;div&gt;Although I'm going to be trying to go low-glycemic, I'm going to torture myself by baking some holiday breads.  I have a friend who's hard to buy for but I just found out that his late mother used to bake him hoska, a Czech Christmas bread.  So I thought I'd give that a shot.  I just went shopping for ingredients at Trader Joe's and Albertson's ('cause it was nearby.  I would rather have shopped at Berkeley Bowl for this stuff).  Holy Toledo,  candied fruit peel is expensive!  I mean, I know it would be labor-intensive for me to make myself, but criminy!
&lt;br/&gt;
&lt;br/&gt;I know I'm going to have to have at least one dry run before making the finished product.  Although I have no trouble growing yeast when I'm *not* baking, the moment I want yeast to grow, it won't.  I find yeast breads and pastries incredibly difficult.

&lt;br/&gt;I'm going to ask some friends to save their fruit peels as I think I'll probably candy the next batch of peels myself.  Wish I still had access to the lemon tree that used to be in back of my old place.

I made little cheese biscuits instead of collards, and the collards Walter made last week never actually got reheated. Michelle blew me away with her offerings...

&lt;br/&gt;Flour, Eggs, Sugar, Chocolate . . . Just Add Chemistry

&lt;br/&gt;ATLANTA - With two bad knees, Shirley O. Corriher is not quite as nimble as she once was when she performs her "protein hop" - an interpretive dance of sorts to demonstrate the molecular transformations that turn flour, eggs and sugar into a cake.
&lt;br/&gt;
&lt;br/&gt;Her arms wave vigorously, mimicking how proteins in wheat flour interlock to provide the structure that holds a baked good together.
&lt;br/&gt;
&lt;br/&gt;"When you add water to flour and stir," she says, "these two little proteins - glutenin and gliadin - grab water first, and each other, to make these springy elastic sheets of gluten."
&lt;br/&gt;
&lt;br/&gt;Ms. Corriher, who trained as a biochemist and once cooked for 140 boys in a boarding school she started with a former husband, has found a comfortable niche dispensing folksy, scientific wisdom about what really happens during cooking. Her home phone number is the 911 for chefs and cookbook authors with kitchen crises.
&lt;br/&gt;
&lt;br/&gt;Susan G. Purdy, author of "The Perfect Cake" who is working on a book about baking at high altitudes, called Ms. Corriher in a panic when a chocolate cake recipe that had previously worked perfectly ended up as a chocolate puddle at 9,000 feet.
&lt;br/&gt;
&lt;br/&gt;Ms. Corriher found that Ms. Purdy was using so-called Dutch-processed cocoa, treated with an alkaline substance like baking soda to produce what many consider a better, less bitter taste. Before the glutenin and gliadin proteins can clump together as gluten, they must first partly unwind and unfold, and acidity in the batter induces that unwinding.
&lt;br/&gt;
&lt;br/&gt;The Dutch-processed cocoa neutralized the acidity; the glutenin and gliadin did not unwind; and Ms. Purdy's cake never solidified. Ms. Corriher had a simple solution: throw out the Dutch-processed cocoa. "It's a disaster for you," she told Ms. Purdy.
&lt;br/&gt;
&lt;br/&gt;Ms. Purdy substituted natural cocoa. The cake worked.
&lt;br/&gt;
&lt;br/&gt;On the other hand, too much gluten produces a chewiness that, while welcome in bread, is usually not a quality sought in a cake. That is why cake flour contains 7.5 to 8.5 percent protein, while bread flour is more protein rich, 11.5 to 12.5 percent. (All-purpose flour is somewhere in between and thus not ideal for either use.)
&lt;br/&gt;
&lt;br/&gt;Cooking is often taught as a step-by-step progression of instructions or an art learned through some nebulous communion with the ingredients, but it is also chemistry, predictable, repeatable molecular reactions brought about by mixing ingredients - which are, after all, chemicals - and applying heat to them.
&lt;br/&gt;
&lt;br/&gt;Ms. Corriher's 1997 book, "CookWise: The Hows and Whys of Successful Cooking, " brought such scientific facts to home cooks, and although the first 150 pages of the book discuss baking, her publisher wanted a sequel devoted entirely to baking. The publisher gave her three years to deliver the manuscript. Today, four years after her deadline, Ms. Corriher is still working on the book, to be titled "BakeWise."
&lt;br/&gt;
&lt;br/&gt;For the last two years, she has been stuck on the cake chapter.
&lt;br/&gt;
&lt;br/&gt;"She's - how should we say it? - a very thorough writer," said her friend Harold McGee, author of "On Food and Cooking."
&lt;br/&gt;
&lt;br/&gt;For example, Ms. Corriher performed an experiment on sifting. Many recipes call for sifting to mix flour with the other dry ingredients, and it is especially important to disperse the leavener - typically, baking powder - so that a cake rises evenly.
&lt;br/&gt;
&lt;br/&gt;So Ms. Corriher took a black powder with roughly the same characteristics as baking powder and sifted it with flour.
&lt;br/&gt;
&lt;br/&gt;Sifting, it turns out, is not particularly effective.
&lt;br/&gt;
&lt;br/&gt;"You just didn't get a good mix, even after three or four times," Ms. Corriher said. "You can see little dark streaks."
&lt;br/&gt;
&lt;br/&gt;Simply stirring the dry ingredients together with a wooden spoon is better, she said.
&lt;br/&gt;
&lt;br/&gt;The other historical need for sifting was to fluff up the flour after it had been compacted during shipping, but that is also no longer necessary, because flour, sifted at the factory, is now shipped in individual packages instead of large barrels and is not crushed as much.
&lt;br/&gt;
&lt;br/&gt;Contributing to the delay, Ms. Corriher has also not been able to stop herself from making yet another variation of a familiar cake recipe, in search of yet one more refinement.
&lt;br/&gt;
&lt;br/&gt;"Oh, I've been making cakes and making cakes and making cakes and making cakes," she said. "I end up making five or six or seven cakes testing out things that I think up."
&lt;br/&gt;
&lt;br/&gt;Last year, she and her husband, Arch Corriher, ate more pound cakes than they could remember.
&lt;br/&gt;
&lt;br/&gt;The traditional pound cake got its name because it contained a pound of flour, a pound of sugar, a pound of eggs and a pound of butter. That was also a large cake, so modern day recipes usually cut those quantities in half. It is also a fairly dense, dry cake.
&lt;br/&gt;
&lt;br/&gt;Bakers over the years have improved the traditional pound cake by adding other ingredients: buttermilk or sour cream to make it moister, baking powder to make it airier.
&lt;br/&gt;
&lt;br/&gt;Ms. Corriher has her own wrinkles to the recipe, substituting cooking oil for part of the butter - that greases the wheat proteins, producing less gluten and leaving more moisture for the cake - and potato starch for some of the flour. Potato starch granules are considerably longer than the starch granules found in wheat flour. "It really absorbs water like crazy," Ms. Corriher said. "And it makes things really moist."
&lt;br/&gt;
&lt;br/&gt;(Potato starch is not a panacea for all cakes. When she tried potato starch in a basic white cake, the result was grainy. "It was awful, awful, awful," Ms. Corriher said, recoiling at the memory. "Life goes on.")
&lt;br/&gt;
&lt;br/&gt;While her pound cake was delicious, Ms. Corriher was not satisfied, because it sagged when baked in a loaf pan. She tried more variations, like additional flour, to produce an attractive, domed top, but those turned out drier. "Of course, the one with too much butter and sugar is going to taste better," she said.
&lt;br/&gt;
&lt;br/&gt;Finally, she decided the solution was to bake the pound cake in a Bundt or tube pan, so that the shape of the pan held the cake together. "The moral of the story is, Here is a cake that is technically wrong," Ms. Corriher said, "but the taste is great."
&lt;br/&gt;
&lt;br/&gt;Taking the destabilizing effects of sugar to an extreme is the tunnel-of-fudge cake. "It is so deadly, you can't believe how deadly it is," she said. "We are deliberately doing a cake with way too much sugar."
&lt;br/&gt;
&lt;br/&gt;Sugar, she explained, binds to the flour proteins, preventing them from forming the structural lattice. "Glutenin runs off with sugar," Ms. Corriher said. "Gliadin runs off with sugar, and you don't get much gluten."
&lt;br/&gt;
&lt;br/&gt;When baked, the outer portions reach a high enough temperature that they harden, but the cooler inner part remains soft and gooey.
&lt;br/&gt;
&lt;br/&gt;"We've eaten a whole cake, the two of us," Ms. Corriher said.
&lt;br/&gt;
&lt;br/&gt;Her husband interjected, "Over a period of time."
&lt;br/&gt;
&lt;br/&gt;"It was a very brief period of time," Ms. Corriher said. "It's very addicting."
&lt;br/&gt;
&lt;br/&gt;"It's really rich," Mr. Corriher said.
&lt;br/&gt;
&lt;br/&gt;"And wonderful," Ms. Corriher added.
&lt;br/&gt;
&lt;br/&gt;The original tunnel-of-fudge cake won second place in the 1966 Pillsbury Bake-Off Contest for Ella Rita Helfrich of Houston. That version used a fudge icing mix to create a gooey chocolate center. But Pillsbury discontinued the icing mix, and the resulting clamor of home bakers led Pillsbury to release a recipe for making tunnel-of-fudge cake from scratch.
&lt;br/&gt;
&lt;br/&gt;Ms. Corriher again applied her standard tricks, substituting two yolks for one of the eggs, substituting oil for part of the butter. In addition, she substituted dark brown sugar for some of the white sugar. "The reasoning there is dark brown sugar brings out a fudgy taste in chocolate," she said.
&lt;br/&gt;
&lt;br/&gt;She also roasted the nuts. "You get much more flavor," she said. "You know how much better a roasted nut tastes than a plain old raw nut."
&lt;br/&gt;
&lt;br/&gt;Dutch-processed cocoa in a tunnel-of-fudge cake would probably spell disaster, preventing even the outside of the cake from setting, she said.
&lt;br/&gt;
&lt;br/&gt;Ms. Corriher said she had learned much about cakes by making one that leaves out one of usual ingredients. "You really learn what flour does and what eggs do," she said.
&lt;br/&gt;
&lt;br/&gt;A chocolate cake called crazy cake leaves out the eggs. Ms. Corriher suspects it dates to World War II when staples like eggs were rationed.
&lt;br/&gt;
&lt;br/&gt;Without the egg proteins, which also help a cake hold together, gluten is essential for the cake to hold its shape. Thus, cake flour, with its lower protein levels, will not work for crazy cake.
&lt;br/&gt;
&lt;br/&gt;Ms. Corriher improved the recipe by cutting down on the vinegar - needed to make the batter acidic - and the leavener, but she hit a snag when she tried adding buttermilk to make it moister. The resulting cake remained pudding. That led to a debate with Harold McGee about why the cake did not set. She thought that the buttermilk was affecting the acidity. Mr. McGee thought the milk proteins were preventing the flour proteins from holding together.
&lt;br/&gt;
&lt;br/&gt;Mr. McGee was correct. When she added more flour, the cake again set. Milk proteins differ from egg and flour proteins in that they do not coagulate, Mr. McGee said. "You can boil milk for hours and it doesn't set," he said, "whereas if you boil an egg for 20 seconds, it turns into a solid."
&lt;br/&gt;
&lt;br/&gt;Milk solidifies - into yogurt or cheese, for instance - only if it has been treated with an enzyme that knocks off part of the proteins, making them more like other proteins.
&lt;br/&gt;
&lt;br/&gt;Meanwhile, Ms. Corriher said she wanted to finish "BakeWise" within a few months. She thinks that maybe it will even be in bookstores by next Christmas. "I really think I'm on the homestretch on the cake chapter," she said.&lt;/div&gt;

      <title>Thanksgiving Menus</title>

      <description>&lt;div&gt;This year I have a kitchen where most of the utensils are still in boxes, my stove doesn't work, I only have a dorm-sized fridge, but the conventional and microwave ovens work.  I tried to pick up a last minute item or two at Berkeley Bowl but it was a madhouse even at 1pm today.  So this T'day menu is very barebones and experimental.
&lt;br/&gt;
&lt;br/&gt;I was on a fence about whether I'd make T'day my last blowout or whether I'd get back to low-glycemic eats.  The sight of my burgeoning paunch convinced me to tighten the belt at least some of the way if not all of the way.
&lt;br/&gt;
&lt;br/&gt;Stuffing:
&lt;br/&gt;
&lt;br/&gt;Bread for Life Low- Carb bread cubed and toasted in the oven.
&lt;br/&gt;Trader Joe's Organic Quinoa slow-cooked in a mini-Crockpot in organic chicken broth with sage.
&lt;br/&gt;Butter, sage, thyme, oregano, salt and freshly ground black pepper, cut celery cooked in the microwave. I browned some onions in bacon grease at work today (which has a stove but no oven) and added those to the above mix.  I thoroughly mixed the spices, celery, onions and butter with the bread cubes.  I added a little hot water.  I then blended in quinoa until I reached a proper consistency. (I didn't want more quinoa than bread cubes).
&lt;br/&gt;
&lt;br/&gt;This is my first time eating quinoa.  It's not really my favorite. The taste is a little too bitter for me.  "Bitter" is probably too strong a word, but I like my grains to be more demure.  Still, the stuffing's not bad at all.  Wish I had some water chestnuts to add to it, though.
&lt;br/&gt;
&lt;br/&gt;I'm broiling a Cantella's turkey &amp;amp; cranberry sausage in the oven.  Didn't get to the market in time to get an organic turkey.
&lt;br/&gt;
&lt;br/&gt;Later, I'll make a pumpkin custard (basically pumpkin pie without the crust).  Then I can have a spinach &amp;amp; cranberry salad.
&lt;br/&gt;
&lt;br/&gt;It's not too bad a menu given the limitations I'm under at the moment.&lt;/div&gt;

The center one is a special low carb sundae. Instead of scoops of mashed potatoes, it has the famed "meat muffins" in their place. The meat muffins were made from pork sausage and egg, broiled in a muffin pan.&lt;/div&gt;

&lt;br/&gt;last night i had the most delicious dream about bread.  there was this guy that was taking me on a tour around his house (he was like the don of a village or something).  we started at one side of his massive kitchen, where he cut me off a huge slab of bread.  warm, tender, flaky (and crunchy on the outside) bread.  i cradled it like a baby, close to my chest, tearing off pieces as we moved around the house.
&lt;br/&gt;
&lt;br/&gt;i don't remember much more, just the warmth and sweet smell of the bread.
&lt;br/&gt;
&lt;br/&gt;i know that as we neared the end of the tour (coming full circle and entering the other side of the kitchen), there was a moment when we heard unintelligible shouting and he opened the back door.  there was a woman, who was screaming about how her bread had been stolen and that he must find the thief or something.  he turned away, leading me back into the kitchen, and she followed us, nagging the whole time.  in one swift motion he grabbed the bread out of my arms, threw it at her, sliced off a larger, warmer piece, and handed it to me.

&lt;br/&gt;
&lt;br/&gt;Popcorn Balls
&lt;br/&gt;
&lt;br/&gt;2 qt 	Popped popcorn (kept warm)
&lt;br/&gt;1 c 	Sugar
&lt;br/&gt;1/3 c 	Corn syrup
&lt;br/&gt;1/3 c 	Water
&lt;br/&gt;1/4 c 	Butter
&lt;br/&gt;1/4 ts 	Salt
&lt;br/&gt;1 t 	Vanilla
&lt;br/&gt;
&lt;br/&gt;Combine sugar, cornsyrup, water, butter and salt in a large saucepan. Stir over medium heat until sugar is dissolved. 
&lt;br/&gt;Remove from heat. Quickly stir in vanilla.  Pour syrup mixture over popcorn, stirring to mix well. Form into balls.  It helps to get your hands a little wet to avoid stickiness.
&lt;br/&gt;
&lt;br/&gt;You can also add toasted pecans, mini marshmallows, food coloring, dried cranberries....whatever you like.
&lt;br/&gt;
&lt;br/&gt;Roasted pumpkin seeds
&lt;br/&gt;
&lt;br/&gt;Easy recipe....clean seeds and bathe them in olive oil, salt and pepper and roast them on a cookie sheet in a 350 degree oven.
&lt;br/&gt;
&lt;br/&gt;Woohoo!
&lt;br/&gt;
&lt;br/&gt;Hot Apple Cider
&lt;br/&gt;
&lt;br/&gt; 1 quart cider
&lt;br/&gt; 1/2 cup brown sugar
&lt;br/&gt; 1/2 Tablespoon whole cloves
&lt;br/&gt; 1 small cinnamon stick
&lt;br/&gt; 1/8 teaspoon salt
&lt;br/&gt;
&lt;br/&gt;Mix together and simmer 20 to 30 minutes.  You can also add orange and lemon peel  cut in strips.
&lt;br/&gt;
&lt;br/&gt;If you want to turn it into Hot Apple Cider with a kick then add Brandy and maybe add some orange juice too.
&lt;br/&gt;
&lt;br/&gt;I want to see some more!!
&lt;br/&gt;Get in the spirit people.........&lt;/div&gt;

&lt;br/&gt;Pesce
&lt;br/&gt;Sardina alla Graticola (whole grilled sardines, topped with olive oil and lemon)
&lt;br/&gt;
&lt;br/&gt;Verdure
&lt;br/&gt;Funghi alla Graticola – grilled marinated portabello mushroom with olive oil and parsley

      <title>Let's talk turkey</title>

&lt;br/&gt;So December 17th will most likely be the weekend I will be up there.  I know it's a bit premature but I thought I would throw it out there and find out what ya'll think about a day or night foodporn fest.  I'm also wondering if Katey is willing to have it at her place??  And because I mentioned turkey and some of you might have started salivating at the thought of it...here is a recipe for Turkey Brine.  Now I know that sounds weird but I have been the acting family Thanksgiving chef for the last 4 years and so I tried it last year and my family told me that it was the best turkey I had ever made......
&lt;br/&gt;
&lt;br/&gt;1 1/2 cups, KOSHER salt (not regular, use Kosher) 
&lt;br/&gt;1 1/4 cups, brown sugar 
&lt;br/&gt;10 whole cloves 
&lt;br/&gt;3 teaspoons, black peppercorns 
&lt;br/&gt;1 1/2 gallons (6 quarts) apple juice or cider (non-alcoholic) 
&lt;br/&gt;The peel from one orange or one tangerine (colored part only - not white pith) {I used two} 
&lt;br/&gt;Optional: 3 teaspoons, dried thyme and/or 3 teaspoons, dried sage
&lt;br/&gt;
&lt;br/&gt;--------------------------------------------------------------------------------
&lt;br/&gt;
&lt;br/&gt;Combine all ingredients in a non-reactive pot, bring mixture to a boil, lower heat and simmer for 15-20 minutes (partly covered). Allow brine to cool completely. 
&lt;br/&gt;
&lt;br/&gt;Rinse turkey under cool running water, inside and out (remove giblets from body cavity - but reserve them, if desired, for giblet gravy). 
&lt;br/&gt;
&lt;br/&gt;Pat turkey dry with paper towels, then immerse turkey in cooled brine.* Turkey should be COMPLETELY submerged in liquid (place a plate on top of the bird if necessary to keep it covered with the liquid). 
&lt;br/&gt;
&lt;br/&gt;Cover the pot and refrigerate for at least 8-10 hours, up to 24 hours. 
&lt;br/&gt;
&lt;br/&gt;Remove turkey, rinse, pat dry, and roast as usual. 
&lt;br/&gt;
&lt;br/&gt;&lt;/div&gt;

      <description>&lt;div&gt;I've been an experimenting fool for breakies lately. Chai oatmeal and flavored pancakes. I think the next thing I'm going to try is banana bread pancakes.  Just need to get the spices down.

      <description>&lt;div&gt;Why is it that popcorn always tastes better at the theater?  I've popped my own on the stove, microwaved, have even enjoyed kettle-style popcorn at a farmers market or street faire but nothing compares to the popcorn I eat at the movie theater. wtf?
&lt;br/&gt;And while we're on the subject....why are peanuts much yummier when they are thrown at you in the stands while watching a baseball game?
&lt;br/&gt;Why are hotdogs/bacon-wrapped hotdogs so much better from one of those little carts that sit outside a club, or a bar or whatever?
&lt;br/&gt;Why are pancakes 10x  better in an allnight cafe at 4a.m.??
&lt;br/&gt;
&lt;br/&gt;Is it the food? the situation? the setting?  the people?
&lt;br/&gt;Wow!  I think about food more than I thought I did......&lt;/div&gt;

      <title>mac n cheese n ham n peas</title>

      <description>&lt;div&gt;more cook's illustrated goodness... this recipe (which looks like a whole lotta nothin' in the photos) is SO GOOD I CAN HARDLY STAND IT. we used a low sodium "country" ham and peas (once again, biddy is the queen of quality meats - she knows where all the good butchers and deli counters are). they say you can halve the recipe, but why would you? feed your friends.
&lt;br/&gt;
&lt;br/&gt;CLASSIC MACARONI AND CHEESE
&lt;br/&gt;Serves 6 to 8 as a main course or 10 to 12 as a side dish
&lt;br/&gt;
&lt;br/&gt;It's crucial to cook the pasta until tender--just past the "al dente" stage. In fact, overcooking is better than undercooking the pasta. Whole, low-fat, and skim milk all work well in this recipe. The recipe can be halved and baked in an 8-inch-square, broilersafe baking dish. If desired, offer celery salt or hot sauce (such as Tabasco) for sprinkling at the table. 
&lt;br/&gt;
&lt;br/&gt;Bread Crumb Topping
&lt;br/&gt;6 slices (about 6 ounces) good-quality white sandwich bread, torn into rough pieces 
&lt;br/&gt;3 tablespoons cold unsalted butter, cut into 6 pieces
&lt;br/&gt;
&lt;br/&gt;Pasta and Cheese
&lt;br/&gt;1 pound elbow macaroni
&lt;br/&gt;1 tablespoon plus 1 teaspoon salt
&lt;br/&gt;5 tablespoons unsalted butter
&lt;br/&gt;6 tablespoons all-purpose flour
&lt;br/&gt;1 1&amp;amp;#8260;2 teaspoons powdered mustard
&lt;br/&gt;1&amp;amp;#8260;4 teaspoon cayenne (optional)
&lt;br/&gt;5 cups milk (see note)
&lt;br/&gt;8 ounces Monterey Jack cheese, shredded (2 cups)
&lt;br/&gt;8 ounces sharp cheddar cheese, shredded (2 cups)
&lt;br/&gt;
&lt;br/&gt;1. For the bread crumbs: Pulse bread and butter in food processor until crumbs are no larger than 1&amp;amp;#8260;8 inch, ten to fifteen 1-second pulses. Set aside.
&lt;br/&gt;
&lt;br/&gt;2. For the pasta and cheese: Adjust oven rack to lower-middle position and heat broiler. Bring 4 quarts water to boil in Dutch oven over high heat. Add macaroni and 1 tablespoon salt; cook until pasta is tender. Drain pasta and set aside in colander.
&lt;br/&gt;
&lt;br/&gt;3. In now-empty Dutch oven, heat butter over medium-high heat until foaming. Add flour, mustard, and cayenne (if using) and whisk well to combine. Continue whisking until mixture becomes fragrant and deepens in color, about 1 minute. Gradually whisk in milk; bring mixture to boil, whisking constantly (mixture must reach full boil to fully thicken). Reduce heat to medium and simmer, whisking occasionally, until thickened to consistency of heavy cream, about 5 minutes. Off heat, whisk in cheeses and 1 teaspoon salt until cheeses are fully melted. Add pasta and cook over medium-low heat, stirring constantly, until mixture is steaming and heated through, about 6 minutes. 
&lt;br/&gt;
&lt;br/&gt;4. Transfer mixture to broiler-safe 9 by 13-inch baking dish and sprinkle evenly with bread crumbs. Broil until crumbs are deep golden brown, 3 to 5 minutes, rotating pan if necessary for even browning. Cool about 5 minutes, then serve.
&lt;br/&gt;
&lt;br/&gt;
&lt;br/&gt;Macaroni and Cheese with Ham and Peas
&lt;br/&gt;Cut 8 ounces baked deli ham, sliced 1&amp;amp;#8260;4 inch thick, into 1-inch squares. Follow recipe for Classic Macaroni and Cheese, adding ham and 1 cup frozen peas to cheese sauce along with pasta. 
&lt;br/&gt;
&lt;br/&gt;
&lt;br/&gt;Macaroni and Cheese with Kielbasa and Mustard
&lt;br/&gt;Cut 8 ounces smoked kielbasa lengthwise into quarters, then cut each quarter crosswise into 1&amp;amp;#8260;2-inch slices. Follow recipe for Classic Macaroni and Cheese; in step 3, add 1 medium onion, chopped fine, to foaming butter and cook, stirring occasionally, until onion begins to brown, about 6 minutes. Add flour to onion and continue with recipe, reducing salt in sauce to 1&amp;amp;#8260;2 teaspoon and adding kielbasa and 4 teaspoons whole-grain Dijon mustard to cheese sauce along with pasta. &lt;/div&gt;

      <description>&lt;div&gt;i LOVE cook's illustrated. my friend biddy and i have been cooking some "home food" the past month or so from their recipes. stellar!
&lt;br/&gt;
&lt;br/&gt;a few weeks ago we did meatloaf. biddy went to a real butcher for the meats and bacon. i keep thinking i want to apprentice to an old fashioned butcher, i think it's so cool to know your meat. uh, and i like knives.
&lt;br/&gt;turns out this recipe is apparently the best way to cook bacon, ever. that's right, on a bed of meat. deeeeeelicious. the glaze was a bit on the sweet side for me - if i made this again i might fudge around with the recipe a bit.
&lt;br/&gt;
&lt;br/&gt;we had leftover meatloaf sandwiches on delicious franchese rolls with organic lettuce and tomato. i confess i like leftovers even better than firsts. read whatever you want into that! ;)&lt;/div&gt;

      <description>&lt;div&gt;Sorry, I have been so sick.
&lt;br/&gt;
&lt;br/&gt;I'm feeling slightly better now.  Haven't been eating too much lately.  I ordered a pizza last night (which I never do, not a big pizza fan).  Papa Johns, people say, is the reigning heavy weight pizza store of it's class.  Meaning it's a fast food style pizza place that delivers in less than 30 minutes.  But it's not the best pizza I've ever had.  That award goes to a small chain called Numero Uno Pizza.  Now California Pizza Kitchen is close second, and not only for their pizza.  Numero Uno's appeal, to me, is that they use the sweetest pizza dough I've ever tasted,  tomatoes instead of pizza sauce and tons of cheese.  I've had pizza from the hoity toity italian restaurants as well and none of them have ever wowed me.  So my question, is as far as pizza goes, what makes a good pizza for you?  Is delivery part of the draw?  Where do you go for the best pizza?&lt;/div&gt;

&lt;br/&gt;Me? I think what happens is that I get turned on by food in an emotional and sensual (non-sexual way), and then I realize that I've got a fire in my... uh... loins!

&lt;br/&gt;I think anything that combines salty with sweet, creamy with crunchy, has to get high marks. My favorite sandwich is sexy as hell... whole wheat bread, crispy bacon, cream cheese, red onion, black pepper, chives, and mango chutney.

&lt;br/&gt;Quit scrunching your nose until you've tried it. I made Aaron H try it. Ask him. SERIOUSLY! It's the sexiest sandwich EVER!&lt;/div&gt;

      <title>Alligator soup anyone?</title>

      <description>&lt;div&gt;Throughout my time at the culinary institute strange dishes kept appearing in the classroom, either from the students or my wacky teachers. It wasn't a class requirement but we were strongly influenced by our fearless leader to try everything that came our way. Among the strange:
&lt;br/&gt;
&lt;br/&gt;Alligator soup
&lt;br/&gt;Squab (looked like a roasted sparrow)
&lt;br/&gt;Veal (not so strange but knowing the process didn't exactly tantalize my tastebuds)
&lt;br/&gt;snake (BBQ'd)
&lt;br/&gt;pigtails (heavily greased)
&lt;br/&gt;
&lt;br/&gt;Tried them all, didn't "regurge".  I'm a huge "spit it in the napkin when noone is looking" person, so thats an accomplishment.
&lt;br/&gt;
&lt;br/&gt;What have you tried that you otherwise wouldn't?&lt;/div&gt;
